Sebastien Mouzon crafts a range of biodynamic champagnes from the village of Verzy in the Montagne de Reims. Verzy is comprised of a series of three hills and valleys with a north easterly exposure. The soils here include a large amount of flint - not very common in Champagne - and this lends Sebastien's wines a racy and pervasive minerality. Biodiversity is encouraged in the form of grazing by organic chickens and sheep, and Sebastien is actively planting trees to promote the return of nesting birds, insects and other animals.
L'Atavique is the base cuvee of the house and a blend of all of the 60 parcels farmed in Verzy- 35% Chardonnay from fine chalk in the eastern valley and 65% Pinot Noir from the topsoil and deep clay of the western valley.
