Finding negotiating the inner workings and politics of the family winery Domaine Billaud-Simon to be unnecessarily hard going, the supremely talented Samuel Billaud founded his own wine label in Chablis. In the years that have followed Samuel continues to cement his reputation as one of the town's best half-dozen producers, crafting wines characterized by textural seamlessness and unerring precision. Working with four hectares of organically farmed estate vineyards, supplemented by purchased grapes, manual harvesting of ripe but bright fruit is the rule here.
This wine is a Negoce with 50% sourced from Chablis and the other 50% from Macon, an unusual blend. It has turned out wonderfully, delivering aromas of pears, apples, white flowers and fresh bread, followed by a medium-bodied, ample and fleshy palate that's pure and charming, nodding more to the south than the north this year.
