Bertrand Ambroise works with his two children and have progressively converted the 21h/a estate to organics over the last few years. We have always carried this chardonnay which is grown in clay and silex soils around Premeaux-Prissey. The wine is fermented in used oak casks so the ageing adds structure rather than a flavouring. The wine is not fines and only receives a light filtering. I like burgundian chardonnay a lot and this one always delivers the highest quality and is defined by that steely backbone of freshness with the classic textural quality of well made Chardonnay.
