The wines of Didier Larue tend towards purity in style with a good energy and minerality. The vines are grown in Clay/limestone soil with a relatively short elevage of 10 months and bottled without filtration. he likes working with the lees and re-adds them in some cuvees.
The Les Buees, is made with Chardonnay grapes sourced from south facing parcel of land at 200m of elevation in the commune of Chassagne Montrachet. The grapes are gently crushed with the resulting juice being fermented and then aged in the same 23HL oak foudres on fine lees for 10 months. The resulting wine is fine, elegant and with a gentle toasted aroma on the nose. Rounded but with a wonderful, precising and elegance.
