Francois de Nicolay is one of the rising stars in Burgundy for his wines in Savigny and Pernand. Those vineyards became fully Biodynamic in 2005. Francois recently acquired some vineyards further south in Beaujolais, a region he feels has great potential. With only a handful of vintages under his belt in Beaujolais he is bringing all his years of experience into making these distinctively Burgundian style wines. The vines are over 350 metres high, ferments whole bunches in cement vats and aged in 90% stainless steel with 10% in used oak. The wines see very low additions of SO2 before bottling. We loved this when we tasted it . It is full of energy, earthy spice, lots of dark berry fruit with a length that just goes on and on. An age worthy and complex wine.
