Jerome Billard took over the running of this estate , which is run on organic principles, from his father. Cover crops are used with no pesticides, the crop is hand harvested and only natural yeasts are used. The object is to allow the terroir express itself through the wines. Saint-Romain is deserving of special attention, their 1 h/a of Pinot are on elevated sites at between 900/1,200 metres in a valley behind Meursault in calcareous clay soils. The wine is aged in 20% new oak for 14 months and the grapes a partially foot trodden.
