RM stands for Rumeni Muskat (Gelber Muskateller). Screwcap. Skin macerated for seven days (destemmed), kept cap down, spontaneous fermentation. Pressed and finished fermentation in stainless steel. One year in old oak. No sulphites until they rack off barrel and put into stainless steel before bottling. 650 bottles.
Saffron and honeysuckle. Tastes like a dandelion in spring. Lovely texture, like chewing on clover leaves. Mirabelle and pomelo and candied lemon peel. Yum, yum, and yum. I’d love to have spent just a little longer with this wine, to see how it develops in the glass. It will probably age (and evolve) much more than my suggested drinking dates.
