Situated in the region of Les Terraces du Larzac, the Domaine was created by Stephanie & Frederic in 1999 after they met in Montpellier when they were studying winemaking and oenology . After being provided with training from well-known biodynamic producers , they united forces to take their next step together. Thanks to their sustainable agriculture and vinification relying on no intervention and additives, their take on natural wines could not be more expressive, subtle and lively.
The name Nicot comes from a family ancestor of Stéphanie, Jean Nicot, who is believed to have been the first person to bring tobacco to Europe (hence Nicotine). Nicot Rouge comes from a mixed terroir of limestone, loam and clay. Yields are restricted to concentrate the fruit, and after a long but gentle maceration, ageing takes place in concrete vats. These preserve the characteristics of the varietals, Syrah and Grenache, rather than changing through oak or oxidative ageing.
