Domaine Jacques Simonin is a family estate in the Mâconnais, southern Burgundy, where the limestone-rich soils and gentle slopes provide ideal conditions for Chardonnay. The domaine follows sustainable practices, respecting biodiversity and soil health.
Grapes are hand-harvested, gently pressed and fermented in stainless steel to preserve bright fruit and crisp minerality, with partial maturation on fine lees in oak barrels (approximately 1/3) for added depth. The wine shows lively citrus, green apple and white blossom notes, lifted by a chalky mineral edge.
