Christophe Pacalet has degrees in Bioology and Chemistry, but eschewed a carrer in laboratories to create amazing dishes as a chef. But the allure of making wine was his real passion. The nephew of renowned Morgon producer Marcel Lapierre, Christophe had a ocean of knowledge from his uncle and longed to make wine like him. Setting up his own winemaking project was a dream that finally came true in 1999 with the help of Lapierre. This is where Pacalet focusses primarily on beautiful winemaking by purchasing quality organic grapes from the various Beaujolais denominations. An exhaustive work that is not only giving him very good results but is also helping to reshape the classic way of thinking about wine made with “bought grapes”.
