Sustainably and traditionally framed vines with quite an extraordinary environmental vision. Vines of up to 80 years old are used, grown in basalt soils and at 365 metres above sea-level. The vines are trained in a basket method traditionally carried out on the island called Koulara. It protects the bunches from the elements, minimising water loss and protects the bunches from the harsh island winds. These are amazingly mineral, nearly salty, aromas of oyster shells. the wines are crisp but have that all important oily hint. No oak is used so the textural element in the wine is from the varietal .
