Gorgeous Cremant du Jura from Domaine André et Mireille Tissot in Montigny-les-Arsures

50% Chardonnay, 40% Pinot Noir, 5% Poulsard, 5% Trousseau spontaneously co-fermented. Secondary fermentation is kickstarted with the addition of vin de paille must (100% grape sugar, 100% indigenous yeast). Unfined, unfiltered, zero dosage. Disgorged May 2022.
