Salvo Foti is referred to as the 'Godfather of Wine' around Etna. having served as an oenlogist and consultant for vineyards such as Biodi and Benanti, he decided to work on his own project 'I Vigneti'. It is a collective of vineyard workers, who learn from each other, to preserve the traditions and knowledge of the Etna winemakers. The vineyards are worked without fertilizers or pesticides, and the grapes hand harvested and fermented in open vats with natural yeasts and no thermal control.

The 'Aurora' is named after a local endangered butterfly. It is a wine with aromas of peach and tropical fruits, citrus and minerality. It is smooth and long on the palate, with a seductively fresh finish.
