Miguel Santiago, a grape grower from Cadalso de los Vidrios, has joined forces with winemaker Marc Isart (ex-Bernabeleva, Telmo Rodríguez and his own Cinco Leguas) to produce wines from Gredos from his 15 hectares of vineyards, mostly Garnacha and two hectares of white Albillo in San Martín de Valdeigesias and Cadalso de los Vidrios. The project has been renamed Salvajes de Gredos (something like the wild bunch from Gredos), which is the name of a house linked to his family.
"... the 2023 Salvajes San Martín, from 80-year-old Garnacha vines with a northeast orientation on granite soils in San Martín de Valdeiglesias in the zone of Peña Caballera. The destemmed grapes fermented in stainless steel with indigenous yeasts and a 10-day maceration. It matured in used 500-liter barrels for nine months. It has 14.5% alcohol, a pH of 3.18 and 4.61 grams of acidity. It has notes of wild berries, herbs and flowers and is clean and not terribly complex but very pleasant. It's powerful and vibrant with the San Martín tannin and acidity and nicely balanced in 2023."
