Miguel Santiago, a grape grower from Cadalso de los Vidrios, has joined forces with winemaker Marc Isart (ex-Bernabeleva, Telmo Rodríguez and his own Cinco Leguas) to produce wines from Gredos from his 15 hectares of vineyards, mostly Garnacha and two hectares of white Albillo in San Martín de Valdeigesias and Cadalso de los Vidrios. The project has been renamed Salvajes de Gredos (something like the wild bunch from Gredos), which is the name of a house linked to his family.
"... from 85-year-old Garnacha vines in the wetter part of Cadalso de los Vidrios. The destemmed grapes fermented in stainless steel with indigenous yeasts and a 10-day maceration. It matured in used 500-liter barrels for nine months. It's paler than the wine from San Martín and is more delicate. This is more floral, harmonious and subtle despite being from one of the two villages where ripeness is faster, but with the altitude and rain, it delivered a more elegant wine"
