The Castros are amongst the most respected wine makers in Portugal. They follow Biodynamic principles in the vineyards. This wine is made using a short period of skin contact and fermented using indigenous yeasts. The Encruzado, Sercial and malvasia are fermented and aged in Stainless Steel.. Clarification is carried out using gravity which protects the textural element in the wines. This has lovely aromatics , a lactic texture with a defined freshness. A brilliant wine.
