Founded by Haridimos Hatzidakis and Konstantina Chryssou in 1997 the vineyards at between 100 metres -330 metres above sea-level are farmed organically. They are the only winery on the volcanic island of Santorini who are certified organic, This is made with Asstrtiko in stainless steel vats. Aged in stainless steel for 12 months followed by bottle ageing of 10 months before release. Indigenous yeasts are used and the wine is unfiltered. It is suitable for vegans. Sadly Haridimos passed away and the winemaking is now carried out by his two daughters.
