Jean Foillard is one of the famous 'gang of four' operating in Beaujolais who followed the teachings and principles of Jules Chauvet who really was responsible for moving away from the wines that tasted of ripe banana and bubble-gum. This wines are natural expressions of the land upon they are grown, The Fleurie is grown on pink sandstone and is a rustic style of wine. Harvesting is highly selective and carried out by hand. There is no added SO2 during vinification .This is traditional whole cluster vinification and the ageing is in used oak for 6-9 months and then bottled unfiltered.
