Domaine Dujac

This domaine was acquired by Jacques Seysses in 1967 who has grown the estate to 11.5ha with holdings in Morey St Denis, Bonnes Mares, Echezeaux and Clos de la Roche. Winemaking was handed over to his son Jeremy in 1999 who has introduced significant changes to the wine making philosophy of his father. The estate is now run biodynamically ( 75% of the entire estate) Jacques practised 100 whole cluster wine making but under the control of Jeremy this has changed. Now he uses as little as 65% whole cluster depending on the vine age and site.

He feels that this adds greater complexity and silkier tannins to the wine and adds freshness. His wines are considered more fragrant and perfumed with a firmer tannic structure.
