This recently founded winery is managed by Zmagoslav Petric, who is assisted by cellar master Martin Gruzovin. They primarily work with local grape varieties, using biodynamic methods, both in the vineyard and in the cellar. They carefully select the sites where the vineyards are located. The soil consists of a mix of sand, sandstone, marl, limestone and clay, lending their wines their distinctive mineral notes.
Short maceration (contact with the skins) and pressing, with spontaneous fermentation and malolactic conversion, followed by a second fermentation in the bottle with the addition of frozen must. Ageing of 36 months in the bottle on own sediment (sur lattes). No addition of sulfites or liqueur d’expédition during dégorgement. Golden yellow sparkling wine with some green reflections. Delicate, intense bubbles. Aromas of citrus, peach, Mediterranean herbs, bread crust and a green finish. A fresh, elegant and mineral sparkle.
