This wine is taken from new cuttings of a rose-coloured Chardonnay mutation that Stephane has cultivated. He has kept it separate, watched it over some years and now has enough of this strange pinkish Chardonnay to make a singular cuveé from the fruit.
It's made just in the same way as the other Chardonnays, with wild barrel ferments and some time in barrel before release. The finished wine is white, not pink, but it's an interesting and insanely delicious thing, none the less.
