I first encountered the wines of Thomas Pico at 'Natural wine' fairs in France. His wines feature in trendy Parisian wine bars although Thaomas never characterises his wines as 'Natural'. He is organic and stopped using herbicides in 2007 a year after taking over the domaine. He uniquely (in Chablis) puts his wines through a lengthy elevage, 18 months for his chablis and 24 months for his premier cru wines. The wines have a textural weight while remaining bracing .
