Pablo Calatayud is a focused and courageous wine maker working with old traditions that were nearly or entirely abandoned in the mountains outside Valencia. These are wines from yesteryear but with a modern winemakers technical knowledge. A blend of Pedro Ximenez, Macabeo, malvasia, Vendil and others are aged in 17th century Amphorae for 6 months. The grapes are grown at 600 metres and are organically farmed. This wine is suitable for vegans. Clean, fresh crisp with a touch of salinity....a stunning food wine.
