Cantine Paolini is a small cooperative founded in 1964. Thanks to the Sicilian maritime climate and the winds sweeping off the sea through their vines, they have been able to maintain an environmentally friendly approach, producing organically certified Grillo and Nero d’Avola (that's what you have!). No sulphur is used at any stage in the making of this wine.
