Paolo Vodopivec is from the same school as Josko Gravner, but the results are very different. Situated in the Carso sub region of Friuli, Paolo uses only the native Vitovska grape, to best express the voice of the land used for it growth.
Fermented in amphorae fro 6 months and the aged in large slavonian Botti for two years, this is a full bodied and intense wine. It is complex yet delicate on the palate with ripe fruits, high minerality and and a delicate oxidative note. A truly fascinating wine and one well worth seeking out.
