Etienne Calsac's 'grower champagne' come from the village of Avize in the Cote des Blancs. He converted to organics in 2010 and uses cover crops in his goal to increase biodiversity. This rose is made by 'assemblage' ie adding 10% still pinot noir to the 90% chardonnay. There are only 4grams dosage so the champagne is dry.
