In the mid 1990's Olivier took over the running of this prestigious Burgundian estate from his father Hubert. They hold nearly 16.5h/a mostly around the village of St Aubin. Olivier has reduced the new oak input and now uses about 20-30% depending on the vintage and ages most of the whites for about 12 months. I favour the 'Lamy' style of chardonnay as it is always has defining energy or focus and is never rich or creamy.
