'Pur Sang' is french for thoroughbred and this is wine is just that. This is an oak aged, single vineyard, Sauvignon Blanc spending 12 months on its lees in the barrel before spending a further 8 months in stainless steel before bottling. There are lots of peach, elderflower and cassis aromas on this wine. On the palate, it is vividly peachy with grapefruit flavours and a bright herbiness. There is a rocky, saline minerality which leads to a long, luscious and vibrant finish.
