Thomas Perseval works 6 parcels over 2.5 hectares in the village of Chamery on the
northern side of the Montagne de Reims. His vines are planted in predominantly sandy
soils with some clay and limestone, and the gentle northern and eastern slopes help
retain freshness. Though the family have been ploughing the soil since tl1e 90s, it was a stint with a biodynamic estate in Burgundy that convinced Thomas to switch to full organic farming and he has been certified since 2012.
Since 2014, all of Thomas' wines are single vintage and zero dosage. The Tradition is 43% Pinot Noir, 40% Pinot Meunier and 17% Chardonnay.
