Technical information is hard to come by for the 'natural' wines of Patrick Bouju and Justine Loiseau who are based in the Auvergne, France. This Riesling made with bought in grapes from Alsace is made using indigenous yeasts, unfiltered , with no added SO2 and aged in old wood. Their wines are rare and sought after in the natural wine bars in Paris. It is the rounded textural nature of this wine that makes it stand out from typical Alsace Riesling. This is a wine I love.
